Ingredients:

  • 4 Tbsp Buenas Gourmet Bagoong with Tomato Sauce
  • 2pcs Green Mango
  • 4cups Sushi Rice
  • 6-8pcs Nori Wrapper

 

Sushi Rice:

  • 2 1/2 cups short grain rice, Sushi Rice
  • 1/2 cup Rice Vinegar
  • 4 Tbsp Mirin
  • 3tsp Caster Sugar
  • 2tsp Salt

 

Direction: Sushi Rice (Rice Cooker)

  1. Rinse the rice well under running water, put it in the bowl of your rice maker. 
  2. Add the amount of water required by the rice maker. In mine, 2 1/2 cups of rice is 4 measures of the rice cooker "cup", so I fill up the bowl until the "4" marker on the side of the bowl. 
  3. Put the rice cooker on "Cook". 
  4. Meanwhile, mix up the dressing by combining all remaining ingredients. Stir well to dissolve the sugar and the salt. 
  5. Once the rice cooker has finished cooking, let it sit on 'Heat' for 5 minutes. 
  6. Take out the rice cooker bowl and sit it on a trivet on your benchtop. Grab a friend with a handheld fan or set up an electric fan a little way away from the bowl. Take the dressing and a small plastic rice paddle, and pour a little of the dressing in a spiral pattern over the rice (starting from the outside). 
  7. Using the rice paddle, lightly stir/mix the rice while your friend fans the rice (or you have the fan on low). Continue in this fashion until all of the dressing is used, the rice is cool and glossy.

 

Method: SHRIMP PASTE ANG GREEN MANGO MAKI

  1. Lay sheet of nori on bamboo mat. 
  2. Cover nori with layer of sushi rice, spreading rice about 1/8-1/4 inch thick. 
  3. Lay long strips of green mango on center of rice and Buenas Gourment Bagoong with Tomato Sauce. 
  4. Roll into long sushi roll using the bamboo mat to aid (it takes a little getting used to, but it's fairly easy). 
  5. Cut roll into smaller pieces using sharp knife -- serve with soy sauce.
